Fishing Report: 09/09/19 TO 09/08/19
Stop By Our Office for up to Date Fishing Report
MARLIN: GOOD MARLIN FISHING ALL WEEK FOR BLUES, AND STRIPED MARLIN FROM THE 95 TO THE 180. THEY ARE BITING ON LURES AND ON LIVE PITCHED BAIT, ON THE SURFACE.

TUNA: GOOD BITE ON FOOTBALL SIZED YELLOWFIN, FROM LOS ARCOS TO THE JAIME AND GOLDEN GATE BANKS. A FEW VERY NICE TUNA OVER 150LBS ARE BITING ON THE KITE TOWARDS THE JAIME BANK. THEY ARE BITING ON LIVE SARDINES AND KINGBUSTERS, THERE ARE A FEW BITING ON CEDAR PLUGS AND FEATHERS.

DORADO: VERY NICE DORADO ARE BEING CAUGHT EVERYDAY CLOSE TO SHORE FROM GREY ROCK, TO THE 95 SPOT AND ON THE PACIFIC SIDE FROM THE LIGHTHOUSE TO LOS ARCOS. THEY ARE BITING ON LIVE BAIT, DEAD, BAIT, AND LURES. ALMOST EVERYDAY WE ARE CATCHING THE LIMITS OF SPECIMENS.

WAHOO: BITE IS STARTING TO PICK UP GOOD, THERE ARE A FEW BITES ON LURES. HAVE TO TROLL WITH FEATHERS, AND RAPALAS. WE CAUGHT 2 WAHOO ON MONDAY, AND 1 NICE WAHOO YESTERDAY ON THE CATCH ME.

INSHORE FISHING: THERE ARE SOME NICE WHITE BONITA BITING INSHORE ON SARDINES, A FEW DORADO INSHORE, AND SOME SKIPJACKS CAUGHT ON LIGHT TACKLE FOR FUN.Jc Sportfishing Charters is a family owned and operated business and has been fishing in Cabo San Lucas for the past 25 years. BEWARE:

Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs? You don’t want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report. AMBERJACK:

Amberjack is an Atlantic and Pacific fish of the Carangidae family (genus Seriola). They are a game fish, most often found in the warmer parts of ocean.[1] There are many variations of Amberjack, including greater amberjack (Atlantic), lesser amberjack (Atlantic), Almaco jack (Pacific), yellowtail (Pacific), and the banded rudderfish (Atlantic).
Greater amberjack have a dark amber strip on their head, extending from their nose to their first dorsal (back) fin, which becomes more defined when the fish is excited or feeding.
They have a brownish or bluish-grey back, a silvery-white belly, and an amber horizontal strip along the middle of their body.
Juveniles have a yellow color and five or six dark vertical bars along the sides.
Biology
Greater amberjack can grow up to 6 feet long and live to be 17 years old.
Adults can weigh up to 200 pounds, but are most commonly found to be up to 40 pounds.
Females grow larger in size and live longer than males.
Greater amberjack mature at about 3 to 4 years of age and spawn primarily from March to June on reefs and shipwrecks. A female can release between 18 and 59 million eggs during a single spawning season.
Adults eat mostly crab, squid, and other fishes found on reefs.
Juveniles feed on plankton, including crustacean larvae and other small invertebrates.
Predators include seabirds and larger fishes, such as yellowfin tuna.
Where They Live
Greater amberjack are found in the Atlantic and Pacific Oceans.
In the western Atlantic, they are found from Nova Scotia to Brazil, including the Gulf of Mexico and the Caribbean.

FROM THE ADMIRALS KITCHEN:
JC'S GRILLED DORADO WITH AVOCADO SALSA

Ingredients
Salsa: 1 ripe avocado, cut into 1/4- to 1/2-inch chunks 2 plum tomatoes, cut into 1/2-inch chunks 1 cup minced red onion 1 jalapeño pepper or serrano chile, seeded and minced 1/2 cup minced fresh cilantro 1 lime, juiced 1/2 teaspoon kosher salt Mahi mahi: 1 1/2 pounds mahi mahi, cut into 4 pieces 1 tablespoon extra-virgin olive oil 1 lime, juiced 1/2 teaspoon kosher salt 1/2 teaspoon freshly ground black pepper, to taste

How to Make It:
Step 1
Combine all of the ingredients in a large, nonreactive bowl (glass, stainless steel, or glazed ceramic), and mix gently with a spoon. Set aside. You can prepare this salsa up to a few hours before serving and store it in the refrigerator in a covered container.

Step 2
In a deep, nonreactive dish (glass, stainless steel, or glazed ceramic), marinate the fish with the other ingredients for 20-30 minutes before grilling.
Step 3
Grill over coals or on a grill, or cook under a broiler for 6-8 minutes per side.
Step 4
Serve the fish with the salsa on top.

JC'S LAVENDER SANGRIA:

INGREDIENTS:

1 750mL bottle pinot grigio
1/2 cup brandy
1/2 cup grand marnier
2 cups club soda whatever flavor you’d like
1/3 to 1/2 cup lavender syrup recipe below
1 pint of strawberries sliced
1 10 ounce bag frozen peaches

LAVENDER SIMPLE SYRUP
1/2 cup sugar
1/2 cup water
2 teaspoons dried culinary lavender
2 sprigs fresh lavender

INSTRUCTIONS:Add the strawberries and frozen peaches to the bottom of a pitcher. Pour your wine, brandy, grand marnier, lavender syrup (start with 1/3 cup, taste and add more if you want) and club soda over top and stir. This tastes great when it sits in the fridge and “marinates” for a bit. But you can also serve it right away!

Place the sugar, water and lavender in a saucepan over medium-low heat. Whisk until the sugar dissolves, bringing the mixture to a simmer. Cook for 1 minute. Turn off the heat and set the saucepan aside. Let it cool completely. Strain the mixture through a fine mesh sieve to remove the lavender. Store in a sealed container in the fridge!
