I made this tonight and am eating it right now. This is such a simple recipe and it is AMAZING! Thanks a lot! A will definitely be making this many more times to come!

Now combine ALL the ingredients, the meat, the soups, the rice, the spices and stir all together thoroughly (Don't worry, it will taste much better than it looks at this point) Cover with aluminum foil and bake in a pre-heated oven at 350 degrees for about 1 hour and 10-15 minutes OR until your rice is done... if you like spicy Cajun this is one of my favorite Cajun recipes... I shared this on another forum and it has had more than a hundred thousand hits, its so easy and really is good. Hope you enjoy.


I assume the Red Pepper is Cayenne Pepper and not Red Pepper Flakes.

Cayenne pepper and either a white or a yellow onion will work just fine. Let me know if you like it.

I just put a half batch of this in the oven. The whole recipe was too much for just my wife and me. I replaced the red pepper with Tony Chacere's. I will let everyone know how it turned later.

My wife and I don't care for mushrooms but we thought we would try the recipe as is mostly to see if we like it. We both said we wouldn't fix it again just because of the Cream of Mushroom soup. If I do it again I will leave out the mushrooms completely.

Tried it today for a party of eight. Doubled the recipe which was a mistake as I put it all in one larger pan. Having a hard time getting the rice cooked. Still crunchy after almost two hours. Sampled it and it tasted good except the rice was crunchy.

If you don't like mushrooms, a can of Cream of Celery will work.
I precook my rice using three large bags of Success Boil in the Bag Rice.
You have to use a green bell pepper and fresh celery to complete the Holy Trinity. 2# of ground chuck gets browned with the veggies. The soups are in a pan, blended together with a mixer to remove the lumps and make it smooth and then heated.
The rice gets mixed in with the meat & veggies then the soups get folded in. Salt and pepper and you're good to go. I don't care for hot food so I don't use the cayenne pepper.
The key to any cajun cooking is celery, green pepper, and onion. I use it in everything, dirty rice, gumbo, ettoufee

i made up a batch of Garry’s Cajun Dirty Rice for supper this afternoon. Followed the recipe on everything but the red pepper. Only used 1/2 tsp. and it had just enough kick. Great stuff! Looking forward to leftovers tomorrow.
