Can I smoke a brisket for a couple of hours and then finish it in the oven, ole wise ones?
Foil, temperature and length of time?

Sure I don’t see why not. The other questions you had, sorry can’t help. But I have broiled up some dam good fajitas in my oven.

5 to 6 hours smoke at 250 temp, internal temp of 165.Wrap in butcher paper and finish in oven at 250-275 to an internal temp of 200, time depends on size of brisket. Let rest for a couple hours in the oven with it turned off...

Sure you can finish it in the oven.
Be very careful not to over cook it. It pulls at 145° for rare, at 165°, it is done. I would pull early at about 150° - 160° and wrap in pink brisket paper and CKW (clear kitchen wrap), then rest it. Wrap it up in towels and store it so that it cools slowly.

It's currently 136 degrees outside. Why would you want to use the oven for more than 20-30 minutes? Just saying

I always smoke my brisket for 2 to 4 hours then put it in foil with some beer, Worsterchire sauce and some more spices on low heat in the oven all night and pull it out and let it rest for a while before slicing and shredding. Then I pour the juices over it. Family and friends really like it done this way .

Does it lose the smoke flavor if you finish it in the oven? I've always cooked them at least 10 hours on a smoker, and they are always great but am getting tired of spending the entire day stoking the fire, etc. I have a pellet smoker but haven't gotten the guts to try it on a brisket yet.

I have a pellet pooper, put the brisket on at 3:00 am and went to back to bed. Checked it and wrapped it at 7:00 am, took it out at 10:00 am, let it rest for 2 hours in an ice chest and served it at noon.

One more thing, I don’t do the foil I use pink butcher paper bought off amazon.

Only finished in the oven if emergencies (weather, time constraints) Doesn’t lose the smokiness if the brisket is already at 170 prior to placing in oven However, the oven is a really dry heat and you get a more chopped beef consistency instead of that gelatinous fat oozing tenderness achieved by a smoker.

My Cook it in the oven first. Cook to where it is done, but still tough. Then take to the grill for heavy smoke until blacken up and then low and slow until done. If you smoke first then oven, the house will smell like BBQ. Not that I do it all of the time but when I do: Put the brisket in the cold oven when I go to bed. Set oven for 220 - 230 (depending on size). In the morning get the pit ready, then finish on the pit. So I'll see about 6 - 8 hours in the oven. And 2 - 4 hours on the pit. (depending on size)
