When I bought my boat I was given an extra 4 blade prop. What would the difference be in speed and getting on plane and basic handling using the 4 over the 3. Thanks

Depends on the pitch of the props and many other factors.

A 4 blade of the same pitch and diameter will run slower on the top end but will get out of the hole faster and will be better in the mid range. I would never run one because I prefer a prop that performs better on the top end.

usually.. when running a 4 blade vs 3 blade of the same pitch.. you simply raise the engine 1/2 to 3/4" (depending on type of prop)
that allows the 4 blade to run the proper rpm and still keep good performance.

there are alot of cases where the 4 blade prop is actually faster than a 3 blade.
