I should mention a stouter knife makes it easier to get through the ribs on larger fish.

Nah. I prefer it that way when eaten fresh. But for some recipes and freezer space, prefer to fillet.

You should wipe the knife with a cloth, or rinse it off, after sharpening, or you will likely put some metal shavings in your filet.

Good point. I usually do, must have spaced for a minute with the camera rolling.
