Same as you would mackerel patties. I used to catch em in FL. Lil seasoned salt and fry away. Served with fresh cut fries.
If the fish don't bite your not baiting right...

Just like catfish. Cut, bread and fry. Will be white and delicious BUT you must eat it while it’s hot. Let it cool off and it’s like biting into a cotton ball.

Also the raw fish will be pink and very slimy, don’t get discouraged. It’ll surprise you how good it tastes cooked.
