If you grow your own...how long (length) do you let the pepper grow before you pick it?

Depends on how bad I need them , if you pick them young, they wont be hot

Depends on how bad I need them , if you pick them young, they wont be hot How about 4" ? Too small?

Ones i buy at H E B are usually about 3-5 . If you still have the tag that came with the plant it would tell uou how long before picking . Are they regular jalapenos like what you make poppers with ? If so 3-5 is average size . If you make salsa and want it hot get a small pan of water and bring it to a boil then drop you a couple jalapenos in it for 3-7 minutes . The longer they cook the hotter they get !! When i do that most friends i have wont eat it being too hot ! So i usually cook 4 mins , take seeds out then make my salsa . Still hot but not as bad . Once i cooked for 7 mins and left the seeds in and it was too hot for me !! So careful hot long you cook them !

If you let them grow till they have a few white lines in them they are mature and hot

They will ripen and turn red if you leave them on the plant. Still plenty hot, but a slightly milder taste.
But, the longer you leave them on the plant, the less peppers the plant will produce.
I'm glad there are wine drinkers in this world ..... it saves more beer for the rest of us. Hopper

Oh ..... and the hotter and drier the weather, the hotter the pepper.

Tag says 3-4 inches then pull......I pulled it but not attempted to eat as yet. The next time I pick up a couple spare ribs I want to slice the pepper cross wise kinda thin and put on the ribs while smoking..no seeds!

Ive minced up Fresno peppers and rubbed them on the chicken skin and left them there while I smoked the chicken. I liked the flavor the peppers gave to the chicken. The Fresnos I grow arent particularly hot and are a little thinner fleshed and more sweet than a jalapeo. Ribs rubbed with jalapeos slices ought to be good.
My jalapeos arent very big or hot, some might make 4 inches, but most are closer to three. I grew mine from last years crop seed. Most of the stores sell a bigger variety, seems like there are several types of jalapeos out there now. I kind of like the smaller ones, makes for bite sized poppers.
