The wife and I have followed a pretty strict Keto style diet for just over a year. If you're not familiar with this diet think: very low carb, Extremely low sugar, moderate protien and high fat. Think that healthly fats are grand and sugars, breads and potatos are Out. Anyhow, would love some of your favorite fish recipes that are keto style. Bill, how did you prepare that tasty look piece?
Thanks everyone for the tips and tricks and some recipes that we will try. We've had three meals with the Southern Style Keto recipe that I posted above.
Weds, will be another pan fish trip and will need to cook up another nice meal - Hopefully.

Cajun spice to taste with lots of Parmesan cheese , grated or powder. dip fillets in oil , we use olive.
Lay fillets in glass baking dish , sprinkle spice/cheese mix liberally over fillets.
350 for 12- 15 minutes or till flakes easily with fork
great with Crappie fillets

These bred crumbs, total package 11 carbs. For fish, it ends up being 1 carb or less per fillet. They make a batter version as well. Good for fried or baked fish. This home made verde sauce link below I posted enchilada thread, it has like no carbs, is delish. I made a batch this weekend, I add an anaheim pepper and another jalapeo, and 8oz package of soure creem (very low car) . You can put the verde sauce on anything, it will keep in the fridge for a month. Take a fillet of fish, smear some verde sauce on it (or just source cream), then bred it and fry or bake it. Or grill the fish on cast iron butter and seasoning, put on plate, heat up sauce in microwave and laddel some over there he fish and sprinkle with cheese. https://texashuntingforum.com/forum/ubbthreads.php/topics/7436824/verde-sauce#Post7436824

Pan grilled is great. Turn the burner to high. Take a deep pan and add a little olive oil and butter. Then the secret. Add a little water to the pan (just cover the bottom). Drop in the fillets and add seasoning (steak seasoning, Cajun seasoning, red peppers, black pepper, or whatever you prefer). Cook 2 minutes and flip. Cook 2 more minutes. At this point the water should be boiling off. Flip every 2 minutes till fish starts breaking up. If you do it right the water will be all gone and you can brown the outside. The fish will still be moist on the inside and should be fantastic. Much better than drying it out when cooking without a little water. I use the same technique on the grill.
Then do the same thing with broccoli, yellow squash, and onions. Cook the veggies till they are burnt on the outside. Throw everything together and it's all Keto.

This is intriguing in that it challenges some of my thoughts on how to fry fish. One of the things that I always try to do is to not put the fish into oil that is too cool. In the old days when I battered the fish and put that into oil when the oil is below 350F or even 400F the breading and the fish taste oily or greasy. I use an IR temp gun to verify that the oil is hot enough to use before I drop the fish. Perhaps, I'm not following so well but it sounds like you add, oil, butter and then water and before it gets too hot you add the fish and cook. If the oil and butter were 350F the water would cause the oil to "jump" out of the pan. So give me a better understanding of when to add the water and when to add the fish. Thanks for your thoughts, I'm always trying to learn new tricks.
