Starting to fish in Saltwater more, but not sure of my gear. Wanting to catch great table fare. My current gear is an Ocean Prowler 13 kayak, a couple of spinning rod/reels outfitted with 15-pound braid and an anchor with 8 foot of chain taped to be quieter while being drug on the sea floor. Will be making a gaff within the next few months. I am looking to make most of my rigs weedless on circle hooks.

I would say you need bigger gear or you dont need a gaff.

will you be fishing the bays, inter coastal canal areas, or out in the surf?
you'll never know what your gonna hook up to. i'd respool with 30# braid (still relatively thin), and add a length of 20 or 30# fluorocarbon leader.

Not sure where you're planning on taking that rig, but if you're after bay/flats fish, your tackle is just fine, it'll take care of any trout/red/flounder you will come across.
Ditch the chain idea, if you want to control a drift, a drift sock is much more effective and you won't be dragging in twenty pounds of poot mud with it. Stake out stick is a must. Gaff?? No. Net works fine.

Ill second what Pat said. Drift anchors are great for drift fishing. They look like wind socks. Stake out sticks work well except in deep water or hard packed sand. Dont put the stake out stick through the scupper holes. One, it weakens the plastic there and can lead to leaks. Plus, you wont ride waves or chop well that way. I use a stout shock cord to attach my stake out stick. 6 feet is a good length for a stake out stick. 4.5 ones only are good in the most shallow spots.

I'll third pat on this one. you're tackle is fine for inshore.. and some plug work at the beach as well as pan fish at the beach. But not BIG GAME. Doesn't sound like you're going after sharks or bull reds so I think you're fine. I would add, get a real anchor incase you need to actually park it somewhere in the even you need to wade or leave the yak for any reason at all. Be Safe, use that life preserver. Remember, it's not the arrow... its the Indian. Learn how to locate fish, the lure is not what catches fish.. it's you casting any lure (almost) right infront of a feeding fish. Second the TS DVD's. It's easy to spend hundreds of dollars and days going down there fishing and not catching. The DVD's are a great way to learn more about locating fish. On the stake out pole (agree they are a must for fishing the flats) these are easy to make. I bought a 6' fiberglass tree stake from Walmart and glued a PVC tee on the end of it for a handle. I use some paracord for the leash that connects to my anchor trolly with a stainless carabiner. I have like 10 bucks invested in it. Works great. While you're at Walmart grab a 5 lb. dumbell and tie some paracord to it. Works great as an anchor. If that won't hold you it's time to go in.
