Just south of Katy on 1463, is a place called Tads. They are as good as I've had.

Best I ever had was at Johnny Cace's in Longview. Fresh daily.

You need to try B&B Butcher's "Carpet Baggers", Bill. It's a fried oyster topped with a piece of Wagyu and B&B's version of Louisiana Hot Sauce. They also come with Bleu Cheese Crumbles on top, but I don't do BC
