My wife won't eat fish so I am only cooking for one. I have a small FryDaddy just for fish, that way anything else goes in the bigger one so she doesn't have a fishy taste in what she eats.
Cast, how deep is your oil when you pan fry?

About 1/4 of lard to cook catfish fillets. Did you try mustard under the cornmeal to help with fishy taste?

I will give the pan fried a try. She won't eat fish because when she was a kid she ate a piece with a bone in it. Can't change her mind.

Get the lard hot. Drop it in, get the flipper and gently turn it. Dont overcook it. Good stuff. Try the mustard. Its a gulf coast thing.

I use a couple of cups of white vinegar with a big squirt of Mustard mixed in. Rinse filets off in the vinegar/mustard mix then roll in fish fry. Fry in 375 peanut oil.

I recently discovered that LMB fillets blacken very nicely. I've gone from catch and release to keeping a couple for supper. It's fairly easy to do with Zaterain's blackening spice mix. Downside is needing to do the actual cooking outside unless you have an industrial exhaust fan. Takes about 1 to 1 1/2 minutes each side.

I have not tried it on LMB , But blackening is one of my favorite ways to cook fish. Clean up is a snap compared to deep fry

If I only get to pick one I'd have to go deep fried. Especially for freshwater fish. Saltwater fish are good fried too, but also pan fry, pan sear, bake grill pretty good too. Love redfish on the half shell.

For me it depends on the fish and sometimes the size of the fish. When you say pan fried I'm figuring that's the same as pan seared or blackened. For salmon and kingfish I prefer to smoke it. Spanish mackeral, redfish (under 26"), sheephead & trout I prefer to pan sear it using a blackening seasoning. For reds over 26" up to 30" I prefer to leave the fillet on the half shell and grill it or even cook it on the smoker at about 300 for 20 minutes. Flounder I like pan seared, baked and/or stuffed and baked. Baked fish would be next followed by fried. But it's all good!

You get out of it what you put into it!

I went with pan fried and baked. Only time I deep fry is when there’s a crowd to feed.

Redfish gets grilled, cut into strips and pan fried in Panko, then made into tacos, Blackened. Baked with seasonings, It’s pretty versatile.

Speckled trout usually gets fried in cornmeal or baked. Amandine, Other Asian inspired dishes

Flounder gets fried or stuffed with seafood like crab and shrimp and then baked.

I like salmon and usually bake or grill that. Salmon is about the only fish I will buy at the market and cook.
