Can an Infrared Digital Thermometer measure correct/or near correct internal temps of meat in the cooking process if taken away from the heat of the BBQ pit?

I bought a little digital one at WM for about $10. It works fine for me even though it is no state-of-the-art. Is a probe type that you have to wait some seconds to get an accurate reading. I use it when smoking pastrami. Otherwise I just rely on dead reckoning.
