My dad is going to be adding a unit with LiveScope to his boat. What are the options when it comes to which units to use and which ones are best? And is bigger better for LiveScope? I'm thinking you'll want at least a 9" unit.

I bought the 1042 to get more pixels. I wish I would have bought the 12"

It truly depends on what all you would like to get out of your Garmin Graph. The 93sv has been the most economical unit teamed up with the livescope. If all you are looking for is to get into livescope at the lowest cost-effective manner then the 73sv plus or 93sv plus models are where you want to look.
If you are wanting something with a little more clarity then I would recommend the GPSMAP models such as the 1042xsv 10" display or the 1242xsv 12" display.
If you are going to want to record directly from the unit onto your phone or tablet via the ActiveCaptain App then you will need to go into the GPSMAP models.

David is the GPSMAP 1042xsv or the 1242xsv touch screen?

Bissett: I just recently installed the Panoptix Livescope with a Garmin 93sv plus which is a 9" display, one thing I wish I would have done was go with a bigger unit.

1042 is non-touch buttons only and 1242 has units that are either touch only or buttons only.

UPDATE. Dad went ahead and went with the 12" unit. LiveScope is on backorder so hopefully that comes in sooner than later!
