I have cooked MANY meals but never this
Anyone know a good homemade recipe nothing where you addd the packet and its all salt thanks and happy ST PATTY TO YALL

I made it once when Kroger had corned beef on sale. It was raw. I cooked it with potatoes and carrots. Added cabbage toward the end. It came out about like a pot roast. It comes like this.

Considering its a brisket soaked in a brine there's no way around the salt issue.

To make a corn beef from scratch, you have to have pink curing salt available on line. I've made them several times from lean roast cuts. The same recipe also makes pastrami. It's basically curing salt, kosher salt, and pickling spices. Have to brine it for a least seven days.

Pastrami is a sweet dry cured meat (Mortons Tender Quick) then smoked. Corned beef is a salt cure (Pink Prague Powder) in a brine with pickling spice, then oven baked.

They are not close to being the same product.

I've made them both the same basic way several times. This is the recipe I tinkered with until I got it the way I like it. (Took out cloves as I don't care for them. A slight clove taste remains but not overwhelming.) Both turned out great.

Brine per 1 lb. meat (Lean cuts like brisket tip, bottom round roast, or thin rump roast) - Mixture of 1 pint water, 1/6 cup Kosher salt, 3/4 tsp. pink curing salt, 1/2 Tbs. pickling spices (cloves removed). Bring to boil and allow to cool. Place in large bag with meat and refrigerate for seven days turning occasionally.

Corn beef - Rinse off meat, place in large pot, and cover with water. Add 1/2 Tbs. per pound of pickling spices (minus cloves). Simmer 3-4 hours until fork tender. Last hour add potatoes, carrots, and cabbage chunks for a New England boiled dinner.

Pastrami - After brining rinse and dry meat. Season liberally with ground coriander and black pepper. Smoke (I use hickory or pecan) until internal temperature is 170 degrees.

Prague Powder #1 (pink curing salt) is available on line - Anthony's Pink Salt. A 2 lb. bag lasts forever and is absolutely necessary to make both properly. Otherwise the result is grey in color and not of the best taste.

There are many recipes out there, but this is the one I've developed after several attempts that gets the desired results for my tastes.

Use the recipe I posted, and I don't think you will find it too salty as that was one of the major things I tried to correct in my trial runs. If you smoke corned beef, it becomes pastrami.

I remember looking at the menu outside the chow hall in Iraq and reading Texas style brisket and thinking YEAH!

It was corned beef with bbq sauce. bang

I like corned beef but wow, what a let down!

Cooked some today in my new Instapot. Corned beef great. Put cabbage, potatoes and carrots in and cooked them to death. Still learnin.

I use the meat in a package grocery sells say corn beef with packet, I put on slow boil with spice from packet with nsome new potatoes for about 2 hours then add whole cabbage sliced in quarters set on top of the meat ,let it simmer for 30 minutes, Best Corn Beef I had. Im a pickeyeater and it good.
