I'm looking for any tips on what to do with eggs from the sandies. There's so much of it, it's a shame to waste it. I've tried beer-battering and deep-frying, and that was basically slightly unpleasant.

This evening I tried making a pasta in the style of Lidia's Italian. I was expecting it to be merely palatable, but dang it was good.

Salted the egg sacks overnight. While the noodles boiled, fried the eggs until they formed a paste, with lots of garlic, cracked pepper, and olive oil. Added a ladle of pasta water to the pan, heaped on the spaghetti directly from the pot with tongs, and stir-fried with Italian cheeses. Topped off with pimentos.

Problem was, the GF refused to touch it.

Any other ideas?

you're a brave one! I typically just fillet and go, but I applaud you though.

One 10-pounder is better than ten 1-pounders; but 100 1-pounders is ok too!

Tim, I'm basically too greedy to throw it out.

One last one for now: Roe ceviche.

Put in quite a lot of lime juice, almost a cup for three fish-worth of eggs. The eggs kept on soaking it up. Salt, red onion, tomato, and Italian parsley (store was out of cilantro). Pretty much all you can taste is the onion and lime juice, but maybe that's not such a bad thing.
