Even though I did run charters offshore and bay, I always hated to waste part of the fish.
I watch the captain and his hands lob off the rib section and the loose a lot of fish.
So once I have the initial cut along the spine I use the tip of the filet knife to cut the tiny bone that go from the ribs to the skin. Then I filet the meat off the ribs down to the belly. White bass and Hybrids differ from fish like Red Snapper, their ribs softly end. So you can go down to the center line of the belly.
After the filet is off the skin I cut a little "V" to take out what is typically called the "Y" bones. You end up with a nice section of meat that is normally thrown in the lake.
I will same, it appears that a WB or Hybrid that is full of eggs...the meat gets thinner than in the summer time when there is no eggs.
Going tomorrow, if I catch any...I will post a photo of the finished filet.
One last tip...I keep knives shaving sharp!

Here is a pic from one of the Hybrids I caught today. You guys were not too impressed with my 26" Hybrid...how about a 9.5lb 28" Striper?

Excellent work CapntC. A. 26 inch hybrid and 9.5 lb striper are note worthy in my fishing world .

Poor man, The lake is almost to normal pool and the fishing was way off today...there is still a good flow. But I could tell it's not as strong as last week or even Monday. The word is out the fish were bitting. Huge crowd for a mid week trip, fishing the week days to miss the mob is no longer working. Lake level is at 241...normal pool is 238...so they are pretty close to shutting the flow back. I did manage one Hybrid today...it drew so oh's and ah's from everyone. It was the largest Hybrid I seen caught today...I left at 1:15pm. Solid 24"er!

Just because a hybrid cannot reproduce doesnt mean they lack the instinct to do so.
