Cornmeal and salt. Add some Tony C's if you want to kick it up. All prepared mixes will have a lot of flour in them.

I like to cut my fish into chicken nugget size chunks.
Make a wash with buttermilk and some of the liquid crab boil concentrate (like you would use for crawfish). More if you like spicy.
Then half and half with Louisiana fish fry and flake mashed potatos out of the box.

Yellow cornmeal, salt, pepper, ground red pepper. This is what I use. I've found that if you bread them ahead of time they will get a little gummy and the meal will stick better. Take a little time and pack each one with your hand to better keep the meal on the fish.

i'm too much old school i guess. straight yellow corn meal, salt, pepper, garlic powder and a touch of cayenne to taste. zaterian's is my second choice.

The last time we fried some striper fillets, we put Uncle Chris' fish seasoning (Fiesta brand) on the raw fillets and let them marinate about 30 minutes. For the breading we used 1 part cornmeal and 2 parts flour - no seasoning. It was some of the best fried fish I've ever had.

Here is my favorite breading for fried catfish:
3/4 cup cornmeal 1/2 cup flour 1 t. black pepper 1 t. garlic powder 1 t. paprika 1/2 t. cayenne powder 1/4 t. celery seed
Dip the fillets in buttermilk and then salt them lightly before dipping in the dry mix.

Been frying crappie filets all my life, tried many different recipes and batters.
My go to is very simple and easy and rarely do I find anyone that does not say its some of if not the best they have ever had.
Canola oil or peanut oil fried about 360-375 degrees.
equal amounts of yellow corn meal and Jiffy corn bread mix, add Tony's, garlic powder, and salt to taste.
Place filet in dry bag with batter, pull out and drop in grease.
I usually use one small box of Jiffy and about a cup of cornmeal.

I also grew up on seasoned cornmeal; however a couple of years ago a customer of mine turned me on to this recipe. Equal parts cornmeal, breadcrumbs and flour. Mix well. Roll your fish in this mixture and fry until they float. Remove from the oil and while they are still glistening sprinkle with Tony's. This has become my wife's favorite.

Theres no recipe, just dump enough yellow corn meal on a paper plate and add table salt until you can just taste it in the meal. Then add black pepper to show in the mix and ground red pepper to taste. I rinse and dry my fillets well then coat both sides. I fry just enough for the two us so I use lard not peanut oil, in a cast iron skillet. Just about a minute on each side and lay it on newspaper to drain.

Roll them in mustard first. I Started doing this about 10 years ago after a guy at work said he always did with his catfish. I thought he was kidding at first but he was not. I tried it at my next fish fry with a few samples at first and everyone liked it so It has become part of the process. After cutting fish into pieces and washing and rinsing several times I marinate the fish for at least an hour before frying. Cornmeal, flour, old bay, garlic powder, Tony`s, black pepper, serendipity. I have no specific ratio. I just eyeball everything until I get the taste I prefer.

I put a couple of cups of white vinegar in a bowel. Add a big squirt of mustard and mix. Rinse the fish in vinegar/mustard mix and roll in Louisiana fish fry. Fry in peanut oil at 375

Good lord I cannot believe the cornmeal "nuggets' on here. Cornmeal is [censored] Imo. I learned this 30 years ago while living in Florida....
Equal amounts of Italian bread crumbs and flour. Salt/pepper it some. Then take red/cayenne pepper ( I mix all this in a gallon ziplock) and add LOTS of it....keep adding until the mix has a slight pink hue to it. Take your fillets and cut into nuggets. Do not soak fish in some disgusting pre soak....all it does is help the batter soak up grease. Take your nuggets with just the natural wetness of them and throw in bag and shake.
Your fish will come out with that golden look but a THIN batter/coating on them that has not sucked up all the grease. Throw salt on them fresh from the grease or my favorite is Slap Yo Mama for the cajun flair. You will never go back to GD cornmeal again.

What youre making is batter fried fish like Capt D and Long John, except youre not finishing the batter. Thats ok with me, its still good fish. But obviously, here in Texas (this IS TFF) we like our crunchy corn meal [censored] coated grease soaked fish.

And There is absolutely no comparison when you heat the leftovers up the next day between the grease meal and the way I described....matter of fact mine taste even better the next day. Try it...and say goodby to grease meal.

Well the way you do it in Florida and the way its done here are two totally different things. If you have fish that you need to cover the off taste adding things will help. As for properly cleaned and cared for fish be it crappie or blue cat don't need anything but rolling in corn meal and fry until it floats. Second we don't ever reheat fish but put them in a paper sack and they are excellent cold later that day or the next. We never add anything to corn meal because it just falls off and makes the grease have an off taste/color or burn. You can season the fish if you so choose after cooking, but in fact good tasting fish only require a little salt. If you want Long Johnny Silvers go get there ole fish cooked in the same oil for long periods. Different strokes for different folks.

We had a fish fry contest at my dads place on Fork once. Had about 10 varieties , corn meal salt and pepper, pre soaked in mustard with corn meal, pre soaked in Louisianna hot sauce with corn meal, beer batter with flour, a Yankee made some with crushed wheaties, I can't remember all the rest, put em all out out on a spread in each pan marked with a number and the hands down winner was Louisianna Fish Fry mix in the blue bag.

hands down winner was Louisianna Fish Fry mix in the blue bag. Louisiana is good, probably my second favorite honestly. My #1 would have to be Uncle Buck's though. Occasionally I will mix the two and use them together as one batter. Good stuff.

My daddy told me you could go to hell for frying fish in anything but corn meal and salt. Since, it is my only chance of avoiding that demise, I have never wavered. I sleep good at night!
