Cut a nice sized Axis tender into 1/2” cubes. Cast iron on high heat, tablespoon of olive oil. Cover chunks with Bolner’s fajita seasoning and toss them in. Stir and dump in chopped japs, onion, and bell pepper. Add homemade taco seasoning and a cup of good salsa. Stir it and dump it into container and set aside. Rinse original skillet and add some lard. Medium heat, sizzle corn tortillas to soften them up and add a tablespoon of the fajita mix to it plus a pinch of grated cheese and roll it up and place in baking dish liner with foil. Set oven to 400. Wrap up the rest of the taquitos and place side by side in baking dish. Pop in hot oven just until tortillas start to get crisp.
