I once heard a college professor explain that serendipity was a happy accident. He went on to explain that penicillin was discovered by serendipity, and that the chemist was not down at the bar playing pool.

The same thing happened with this dish. I had cut back on my portions and started making fajitas with my leftover tenderloins. I started like this.

And ended with this. Fajita and nachos.

One night the tortilla broke and spilled all the fillings onto the nachos. Serendipity happened. It was as good as the best thing I've ever eaten. I changed. I started skipping the tortilla and straight to my nachos. Here you go.

Looks great !! My favorite kind of nachos are those that have to be eaten with a fork.

A tortilla would be good for sop up work on the plate. That does look real good. chef
