I used the Meat Church recipe last year and it turned out great. I used his bird bath brine and honey hog rub. Doing the same this year.

Google or UTube search for " Spatchcocked Turkey". It cuts cooking time in half, but more than that, it brings the ultimate amount of juiciness and flavor. With the turkey flat, the legs and breast are on the same cooking plane and exposed to more smoke. If you spatchcock it, use your favorite brine for 24 hours, rinse and season both sides and under skin with your favorite rub, you will never want to do it any way else. Smoke until IT is 165.

I have done a spatchcock turkey before and spatchcock whole chickens a lot. I just recently saw people using the Honey Hog on Turkeys I may try that next year as I like the Meat Church rubs. This year I’m going to try this Mad Max recipe. http://www.nakedwhiz.com/madmaxturkey2/madmaxturkey2.htm

Update: did a practice run today and wasn’t a huge fan of that Mad Max recipe. Probably going to spatchcock and use some Honey Hog or Deez Nuts. I wish I had time to order some of that Meat Church brine.
