Cooking up perch question

May keep some perch this weekend and was wondering what everyone's favorite way to prepare and cook them is. Smallest fish i have clean and cooked is white bass. Thanks for the help!
When I am not fishing I am thinking about fishing. And mostly what I should have done differently my last trip! #Brockstarama

I love them FRIED! I usually scale,cut off head,and gut. Fry them up in either Wesson Vegetable Oil or Pennant Oil. I dip the fish in regular yellow mustard and then cover them with Louisiana Fish Fry Mix,Extra Crispy. They turn out GREAT! Side Note: Goes great with an Ice Cold Modelo!

I am with you, Chuck! I fillet the fish, then coat them with mustard and put them in a plastic bag with yellow corn meal or Fish Fry. Shake well to coat, then drop the fillets one at a time into hot Canola oil. Serve with french fried potatoes or onion rings and hush puppies made with the Justin Wilson recipe. Cold ice tea is great if your doctor won't let you drink beer.

This thread is making me hungry! Plus #1 on all the above! I also love to grill them. I rap my fish in heavy duty foil and put onions,bell peppers, cut tomatoes,and cut up bacon slices in with them. You can also add a table spoon of Lea/Perrins Worcestershire souse if you want. Rap up the foil and place it on hot coals or a hot grill. Let cook for about 30 to 45 minutes! Fish turn out GREAT!
