Cheese on bread. Some times i might butter the bread.
For breakfast it's with scrambled eggs and hash browns, cut up the baloney and mix it in with the eggs and potatoes.

Do you just put the store-bought, packaged bologna in a skillet or do you buy the bologna in bulk from some meat market? I was more curious about smoking the bologna?

The best bologna is the cheap stuff made with chicken, pork and beef. To smoke it, score it 1/2 deep lengthwise and use a sweet rub. Use an aggressive smoke like mesquite because it only needs about three hours in smoke. Thick slice and enjoy.

If you're going to smoke, you want to buy a chubb of Bologna. Most Wal-Mart's have 5lb chubbs of bologna. Any meat market can order it for you if not in stock. Enjoy. I enjoy it fried and smoked.

If you ever go to Granbury go to Pearl Street Station for their smoked bologna sandwich on a jalapeno bun. Don't order anything else there, the rest of the food is ok, but the sandwich is awesome.

American cheese and baloney. Might toast and butter the bun for extra flavor. Prefer thick sliced beef baloney. Don't eat much fried baloney anymore.

Don't have any bologna on hand, but I do have some of that Pickle Loaf. Like bologna with chopped up pickles in it.
Wonder how that would fry up ???

Got a baloney story. I was trucking up through east Tennesee out of Asheville one time and stopped at a little country store. There was a cute hillbilly looking girl behind the counter and I asked for a pound of sliced baloney. There was a nice meat slicing machine on the table behind the girl and I expected her to load up a chunk of baloney and slice up a pound. Nope! Not hillbilly girl. She grabs a chub of baloney and a butcher knife and cuts off a big piece. It just happens to weigh a pound so she wraps it up, charged me $2 and thanked me for coming in. I walked out of the place with a smile. Got a bargain on the baloney and who the heck was I to argue with a hillbilly girl holding a large butcher knife?
