I'm going to take my boat (18’ Crestliner Deep V) up to Minnesota with this summer. I had the bearings on the trailer packed before I brought it back from Minnesota (where I bought it originally) two years ago. I've only towed it maybe 100 miles since then. What do you suggest I do to make sure the trailer is ready for the drive? Thanks for the help.

Bearings, tire pressure/tire condition, trailer lights.
Bearings are probably just fine if you dont show any signs of grease leaking around the hub.
Check the condition of your trailer tires and make sure they are inflated properly. Make sure you have a good spare and all the tools needed to change the tire.
Im sure there are a few other things but this is a good starting point

If it's been two years, I would rinse and repack the bearing, looking for pits or chips. Grease dries out

That's a long trip. I'd buy an extra set just in case you have an issue on the road.

For a trip like that I'd have at least one complete replacement hub assembly and grease, maybe two, on top of servicing what's on there before departure. At lest one spare tire, probably two, my alum floor jack, tools, and a 4 way tire tool.
I tend to overkill on things like that, even on shorter trips, but when I have a problem all I need is a safe place to work for a little while and we're back on the road. Replenishing anything used in the next major town if possible. Chance favors the prepared.
If you're not living on the edge, you're taking up too much space!

Tires and bearings... on the length of a trip, don't cut corners... old tires?.. get new ones.... unless you've done something this past year for the bearings... I would replace with new bearings which includes new grease and seals...
Require a whole lot of luck...

I would replace with new bearings which includes new grease and seals... Replace RACES too....not hard. Wear Patterns on old races and new bearings not to cool. Inspect axles good. Criss cross trailer chains, extra trl light bulbs, and road flares.....couple of small traffic cones.
