Seeing Redfish tailing this week got me to do some drawing. I've had to cut some days short due to lightening so I got my sketch book out and tried to draw one. I think it looks more like a Shark dorsal than a Redfish tail but here is what I came up with. May have to try it again.

The best advice I ever got on cooking shark stakes was to tell me to think of it like a pork chop. If you hit it just right it is wonderful. If you overcook it, it gets rubbery very fast. Think medium but no more.
