Are Croakers edible and I read Ladyfish are edible, but not too good. I fish a shallow channel in August and catch Croakers and LOTS and LOTS of hardheads and a pretty good amount of undersize reds ..... what, besides the crabs are good to eat?

Croaker is good. Whiting ok Sand trout good unti you freeze them then they turn into goo. Sheep head are good but tricky to fillet. Nothing in the bay is better than flounder.

Pompano are excellent. I know theres always someone showing up saying gafftop and hard heads are good. I have no intention of trying that.
Ill add in here that most of our sport fish are tasty except for jacks. Theyre a lot of fun to catch, but theyre not tasty fish.

Do Pompano come up in 2'-3' deep channels, and what bait do I use?

in the surf, occasionally....
while fishing for them, you will most likely catch whiting, they are pretty good & no limit. crab fishbites on a dropper loop setup with a 1 oz weight will get you there most days

Hardhead might taste like filet mignon I'll never know.

Hardheads are nasty. Gafftop are good but they are like cleaning a snot bucket and you have to cut off all of the red meat. Croakers are very oily and you need to do several fresh water rinses on the filets, but pretty goo rolled in cornmeal and fried.

I agree flounder is by far the best!! After that i prefer trout over redfish, I like reds best blackened and have to eat it hot. It gets really fishy to me when it cools.

Don't pass any of these guys up ... possibly the best eating fish you'll find. Be sure you know how to clean them though ... they can kill you. Everything you need to know on how to catch and clean

To foil the hardheads, try this rig: Starting at the end of the line: baited hook, 8 to 12 inches of line, a small float large enough to keep the bait off the bottom, another 12 to 24 inches of line, a sinker large enough to sink the bait and the float. I think it's called a flounder rig...it worked well for me and no hardheads!

Toad Fish, they're better than Red Fish, Trout or Flounder. "Tasty Toadies"
