what is the best size of crystal for tying 1/16 and 1/8 on #2 hook? options are #3 #5 #10 #12

I tie #10 almost all the time. Only time I tie smaller is if I am putting 2 colors together.
I fish on the edge and stay out of the middle

I use #5 more than any other.

If you have to use smaller than 5 you can double wrap if you think it looks better.. And like Rad I like 5 for 1/16. Maybe larger for 1/8...

I use up to #12 even on 1/32, but use #10 a lot. Personally I have some #3 and even a little #6 & #8, bit never use any of these. I use only #10 & #12 on all size jigs! Besides I see mot reason to have a bunch of sizes as the Big Crystal size when wet bend back to make a nice not so spiked body. I have never had any trouble catching fish on any of them!
