Where are some good places in North Texas to go fishing in the colder months where I can fish from the bank? Also, what would be a good method to use when fishing during the colder months?
Normally I only go fishing in the summer/spring and camp and hike during the fall. I would like to get some more fishing in though. Any advice is helpful.

If you're just looking for fishing check TPWD trout stocking schedule and fish the community lakes, park ponds and state parks. The stocking schedule is online.
You most likely will catch a few largemouth too depending on where you fish.
At the state parks you have the hiking and camping along with the trout fishing. Win-win situation.

The creeks of every lake around here are loaded with crappie during the winter and now for that matter. The colder the better.
