Posting this here so I don't lose it again.
3 or 4 chicken leg quarters
2 cup strong chicken broth.
2 cloves (minimum) garlic, chopped. I like lots of garlic.
2 teaspoons dried cilantro or two knorr cilantro cubes.
Vegetable oil.
1 chopped white onion.
Pepper to taste
2 cups cream.
3 cups of loroco (about half a pound)
2 large (or 4 roma size) chopped tomatoes.
Fry chicken in oil just until you get some color then remove from the pan. Add onion and garlic and fry until the onion goes clear. Add your broth, cilantro, pepper, and simmer with the lid on until the chicken is cooked. I did this over fairly high heat so the broth reduced into an almost gravy even with the lid on.
Add the cream and get it to simmering then add the loroco and tomatoes and let it simmer for 5 minutes while stirring fairly constantly. Serve with rice.
