I'd like to add a keyed switch to all the accessories. Lights, graphs, pumps ect.....
How would I go about doing this? Any help would be greatly appreciated.

Find the red fused power wire supplying the accessories at your battery. Run it to switch then the other side of the switch to battery. Mount a power cut off switch there or you can follow that wire to the console and mount a switch inline there.
