Possum Kingdom has great lodging, the harbor restaurant and possum hollow have great food. My family loves it there and sounds like our wives have the same requirements. I like to stay at the PK hideaway cabins but there are tons of options. The bass bite has been good, not sure on the strippers. Some guys on here will tell you to fish the hydrilla mats.

I'm not sure how far you want to drive and for how long, but I have taken two trips for 3-day weekends in the past year to Flowing Wells Resort on Lake Texoma. 2 hours away from you. Loved it the first time so I went back a second time and took the wife who prefers not to rough it:

It's a gated community (they give you a code) so I felt very safe because nobody is there that doesn't belong. They have a ramp and small marina. It's angler-friendly and they have open boat slips and let me keep my boat in a covered slip with no extra charge so I didn't have to launch and load the boat every day.

They have different cabin options. I chose the nicest ones which are 30 feet from the water and have great views with porches and grills. I was there 4 months ago and stayed in this cabin out on the point. Put these coordinates in google maps and turn on the satellite view: 33.771527, -96.789104

Prices are very reasonable. The main downside is this is not the central location of fishing activity on that lake, but I made a 15 minute run out to the main lake and explored the coves easily. The only thing on your list that's missing is good restaurants. You have to drive 15 minutes into town because this is out in the sticks.
