OK, I have a 20-foot Nautic Star that weighs 2100 pounds. Add 480 for a Yamaha F-150, 170 for a tank of gas and 150 for batteries, and I am right at the "max weight of cargo" of 2920 listed on the single axle Wesco aluminum trailer before we get to trolling motor, anchor, gear, etc.

At least once a year I tow the boat 1,000 miles or more ... should I look at adding a second axle? Has anybody had it done?

I think you would be better off looking for a dual axle trailer.

Had McGill look at my single axle trailer and there was just too much fabrication to do it.
- Trailer has to be totally repainted when all the welding is done.
- All new wiring; because it was a tube trailer and the wires would be melted. They could not pull and save them because there is too many hang up inside the tubes and wires get broken when pulled.
- New fingers have to be bought.
- Cross members are both in the wrong places for a dual axle.

It comes down to letting them just build you a new trailer by using your old one as a JIG and strip the running boards off to be used on the new trailer with light, wench/bar, your old axle, spare tire rack and tire. The two wheels and tires can also be used. Trailer was still over $3,000.

You are right on the edge of a single/tandem issue. The NS 1910 is a single axle boat and the 2110 is a tandem axle boat. I would recommend a tandem. Better weight support and in my opinion easier to back with a tandem.
