started a fire and split some deer sausage, stuffed with onion, pc's of summer sausage and cheese. wrapped in bacon and topped with fresh tomato slice. no telling what i'll come up with if the rain hangs around.

really good. easier to cut after being in the fridge overnight. i've been cutting a 1/2 link into like 1"-1 1/2" pcs and nuking them then munchin on em. next time i'll put a little green pepper in there too. someone said to baste em with a dose of cane syrup while cooking to give it a glaze crust. sounds good.

I'll be Smoking a couple of Spatchcocked Yard Birds today. Been using PitBoss's Competition Blend wood pellets. 50% Hickory,25%Maple,and 25% Cherry. Puts out a great smokey flavor..not too sweet, not too strong. I have 2
containers I use for the Pellets. One is called "The Tube" (12" long), the is called the "Wedgie"...it's triangle shaped.
The Tube is filled to the brim and lasts for a 4 hr. cook...the same amount of time to cook at 225*-250*. The Last 30 minutes of the cook, you swab with your favorite BBQ sauce.
