1 large or 2 small cans white beans, drained and rinsed 1/2 cup vinegar (Can be white or apple cider vinegar) 1 small onion chopped very fine 1 large tomato chopped 1 sweet pepper chopped very fine 12 black olives sliced 1/4 cup chopped fresh parsley 1/4 cup olive oil Salt to taste
Marinate the beans in the vinegar for 2-3 hours. Drain. Sprinkle salt over the onions and let sit for a few minutes then rinse really well under running water and squeeze dry. This makes the onions less tart and more sweet. Toss everything with the beans and serve.

That's exactly when I crave it. Finally decided to type it up and save it to the database. I have been considering typing up some of my more exotic dishes to add. Would folks be interested in stuff from South America or the Caribbean or more Levantine dishes?

That looks like it would be great. Is the half cup of vinegar and quarter cup of olive oil correct?

Correct. You're marinating the beans in the vinegar for a couple hours then draining it off. The 1/4 olive oil is for the final assembly.

Bean salad, Greek meatballs, rice pilaf. Simple weeknight meal.
