CHESS PIE

3 large eggs
1 1/2 cup sugar
1 Tablespoon vinegar
1/2 cup melted butter
1 tablespoon pure vanilla extract

400 for 10 minutes. 350 for 45 minutes or until set.

You can add 1 tablespoon lemon juice to make it a lemon chess pie.

I also have this other recipe I've used to good effect. Try this one for something slightly different.

In your food processor, beat together..
1 large egg
4 large egg yolks
2/3 c sugar
2/3 c packed brown sugar
1/2 teasp salt
2/3 c evaporated milk
6 tablespoons melted butter.

Add in 1/2 to 3/4 c chopped pecans

Bake at 275 for 50 - 60 minutes until jiggly in the middle. OR, if you want meringue, Bake for 35 to 40 minutes, until its kind of a corn syrup texture, then add your meringue topping, starting around the edges and working your way in. (I'm going to type up meringue in a different recipe because it goes on so many pies) and raise the temp to 325 and bake another 20 minutes.

**This is the pie y'all like when you're asking for the pecan pie without pecans, or easy on the nuts.

Buttermilk chess pie: Take the 2nd recipe, substitute 2/3 c sugar for the brown sugar, and 2/3 c buttermilk for the evaporated milk. Add 1/2 c chopped raisins AND 1/2 c pecans

Lemon chess: 2/3 c regular sugar INSTEAD of the brown sugar. add zest from 1 lemon instead of salt. 1/3 c heavy cream and 1/3 cup lemon juice instead of the evaporated milk. Leave out the nuts.
