Guys, I am not an avid catman but do have pretty good knowledge in the whisker fish. I am from se oklahoma with real clear water. I have been stationed here in abilene for 8 years and all the cats I catch here have yellow in the meat.... I assume its fat? Is it the stained water? What's the deal with the yellow?

Yellow in channels is normal. Blues and flats should have white meat.

Years ago an ole timer taught me to cut a channel cat under there lower jaw and let them bleed out before cleaning them. That will take out most of the yellow.

Yellow don't hurt in channels. It cooks up white just the same. Any fish will be muddy tasting when the lake is turning over. You want yellow meat get you a stringer of mudcats. Even that meat will cook up white.
