I have been asked to fry catfish for about 25 people. How much fish? And trimmings ?

i figure about 1/4 lb per person on the fish. not sure about the trimmings, depends on what trimmings you're serving and who is doing the serving. if they serve their selves they'll always take more than they will eat.

I usually fry a quart of filets for four people and have plenty. For that many folks I would cook about a gallon of filets.

Recently did a fry for 24 adult males, some big esters and some not. * 24 lbs raw catfish filets cut in 3 pieces per filet. (Had less than a hand full leftover.) * 2 gallons slaw. (About 1/2 gallon left over). * 3 family size bags frozen crinkle fries. ( About 3 servings leftover). * 4 hush puppies per person. (ran out before all were served). This was a serve yourself buffet style with minimal waste noted.

I used to manage a meat mkt.that had a full service seafood dept. as well . I always recommended 1/2 lb. per person and that seemed to work good for most people. I always fix 1 lb. when I cook for me and my wife and it is plenty.

I always fix 1 lb. when I cook for me and my wife and it is plenty. This is a good starting point at 1/2 lb./person. On side dishes figure 6 oz./person and with condiments 1 oz./person. Drinks are 20 oz./person unless during summertime where I would go 36 oz. and since it's fried catfish you might increase to 24 oz./person.
