Shoulder is at 145+. I pulled it. Wrapped it and it rests in the ice chest.

I pulled them both off late last night wrapped them and chilled. This morning they're in foil and resting in my 200 degree oven to finish cooking. Finished pics in a few hours.
Yes, outta PBR.

Looks good but I'm curious...what do you gain by brining an already cured ham? I pondered that myself. We will see I guess. They both came from deep freeze to brine so maybe just defrosting and chilling the brine is all. I will tell you this. It's in the oven and smells so good I'm drowning here.

Oh man! It came out better than I had hoped. Smoke flavor is great and tman rub really brought out the flavor. It doesn't need sauce. We sliced some up for tacos. Oh man again! Mama says my best ever.

The ham is really good. It was cured by Cinnamon Creek. They used a slightly sweet cure. The rub and hickory smoke combined really helped the cure. Sliced a few tastey samples for us. Great ham!
