Anyone got a recipe? Got a wagya tenderloin I'm thinking of smoking this afternoon.

I do this. Everyone loves it.
Marinade- 1 cup soy sauce 1/2cup bourbon 1/4 cup worstershire sauce 2 minced cloves of garlic 1 teaspoon dry mustard.
Trim the tenderloin then soak in the marinade for 8 hours. When you take it out, pat it down with white pepper and course black pepper. Put in a skillet with a few tablespoons of oil and sear it on all sides. Smoke with mild wood at 225 until rare to medium rare. Usually about 3-4 hours.
Save the marinade and reduce it down in a saucepan to serve with the meat. Best tenderloin you can eat.
To marinate the meat I put it in a gallon freezer bag and then pour the mixture over it. Put in fridge and turn over at least once.

Just slice me off a steak, salt and pepper it. Sear it over a wood fire for about three minutes per side and call it done.
