Sand trout processing?

Sand trout processing? - 08/22/16 02:35 AM

Ok , I am a fresh water angler who likes to go to the coast every so often. Every time we go we fry up a load of sand trout the day we leave. The guys say that sand trout cannot be processed in a manner where they will be good at a later time. What is the secret?

You already have the secret. They turn to goo when they get frozen.

Yep, sand trout, make sure they go on ice and then straight to the frying pan.

Different deal, freeze them in water and they'll last a long time. Unless you catch them in the Louisiana marsh, for whatever reason they don't freeze as well.

Sand trout same day. As far as specks, I recently tried a new-to-me method that seemed to work really well. Basically, you keep the fish in an ice slush on the boat. Then filet. Lay individual filets on cookie sheet and freeze. Then dip in an ice slush and freeze again. Then do it again. Then bag. They freeze individually, take a lot less time to thaw, and you can take out what you want from the bag. Extra work on the front end, but worked out well on the other.Here's a little more info:

If you use a vacuum sealer, not water needed.

Malibu, we do something similar. After washing, we place fillets on a cookie sheet, and pop in the freezer for about 20 min then throw them in the vacuum. Seal.

They last forever or at least long enough smile

Still isn't going to save sand trout. Might work good on other fish though.
