Finally hit pay dirt and got the old pan and liner out. I couldn't believe how damp the mortar was, not wet, but easy enough to break and dig out with a flat head shovel.
Knowing what moisture "was" in there, we have decided not to go back in with the old style vinyl liner with mortar.

I need to fill in the dug out pan, make level in order to start the fab work with the new gypsum board enclosure.
What type of bagged concrete is best for this application? The area is 46"x46" now, the new shower will be larger, more like 46"w x 60"l.
I'm also going to rip out all the old insulation and add a better insulated product. The studs are all good with the exception of the lower
left floor piece that got wet over the 40 year period it's been there. Of the 2 walls showing, one has plastic sheeting over the insulation, whereas the other wall only had it about a 1/3 of the way down. Do I need to resheet these walls in plastic, what is the purpose? If they were for
a moisture barrier, moisture will not be a problem with the Kerdi system.
Oh, for the record, that's not water/moisture you see in the pic on the pan floor. I sprayed a solution of bleach/water to knock the
mildew smell down a tad, just musty smelling is all.
