Deviled Eggs

Having my students prepare different Deviled Egg recipes. Here is one of my favorite, send me yours and I will have them try it out.

The BEST Deviled Eggs

Ingredients
6 eggs, hardboiled & sliced in half
2 tablespoons mayonnaise
1 scant tablespoon mustard
1 teaspoon worcestershire sauce
a splash of hot sauce (Frank's Red Hot is my favorite)
salt & pepper, to taste
paprika to garnish

Instructions
1. Place your cooked egg yolks in a small bowl & mash them up with a fork.
2. Stir in the mayo, mustard, worcestershire sauce, hot sauce, salt, & pepper.
3. Scoop the filling into the egg whites.
4. Sprinkle with paprika.

The only ones I don't like are the ones with sugar added.

Almost identical to the ones I make but I couldn't give you actual measurements. Preferred hot sauce is magic chef though. Something really good on them is powdered sumac. Tastes kind of lemony and is the stuff that is sprinkled over hummus. Sometimes I'll add a splash of pickle juice just because.

Thank you. They used the recipe I provided and three different groups added jalapeno relish to one, sweet pickle relish to another and horseradish to another. All were very good.

I prefer more mustard in mine and add about a teaspoon of Trappy's sweet and hot jalapeno's chopped up.

12 eggs
3/4 cup of may
tablespoon of mustard
2 slices of chopped bacon
chopped up pickled jalapeno to taste
sprinkle your favorite bbq rub on top

I don't really have a recipe, I use salad dressing, a little yellow mustard and sweet relish.For a little change of pace though, I sometimes sprinkle with smoked paprika instead of sweet.

One thing I did want to share is how I cook the eggs. I have to give Jaques Pepin some credit for this..( he's the guy that clued me in to the poke trick.)

I take all the eggs and put them pointy end down in the carton. Then take a push pin and poke the round end.( I haven't had an egg split since.)

I add about a tablespoon of salt and vinegar and a half teaspoon oil to the water. I bring it to a gentle boil, add the eggs and cook 10mins. They are perfectly cooked and super easy to peel.

I put them in an ice bath after they gently boil for ten minutes.

This sounds pretty close but without the rub. I bet adding horse radish would be good too.
