Crock Pot Chicken Tacos


Salt and pepper chicken breasts and brown in a skillet with little oil.
Once browned, remove and sauté one onion.
Put all that in a crock pot
Add one can of rotel, one can of chicken broth, and one can of Hatch green enchilada sauce.
Add one teaspoon each of Cumin and Chili Powder
Add two fresh jalapenos (seeds removed) and about 2 tablespoons fresh cilantro.
Once tender, shred chicken and return to remaining broth in Crock Pot.

Fill up shells, crunchy or soft, and top with desired toppings…….

The cilantro is best left uncooked, tastes much better that way. Love me some pulled chicken.
