Wow, this brings back memories of big stone crocks in the basement with fermenting cabbage in them, and bottles of dandelion wine.

Hope you'll post up the recipe and process.

1 head of cabbage thinly sliced
1 1/2 tbs kosher salt
2 tsp caraway seeds.

in a large bowl, cover the cabbage with the salt and let set for 15 minutes
then roughly kneed the cabbage for at least 8 minutes. the point is to
break down the tough stuff. put the cabbage in a jar or crock and cover
with cheese cloth. be sure to weigh it down so there are no air pockets in it.
it's been 3 days and it's starting to turn. I'm thinking 2 weeks minimum.
store in a cool dry place.

Common belief. It does not. My batch is starting to turn. Looking good too.

Thanks, now the issue will be talking the wife into having fermenting cabbage in the house.
Basements were always good for a cool place far enough away so you could do stuff like this.

Day 5 update, scaped off a little mold. Color looks good snd it's getting nice and tangy

Next door neighbor made sauerkraut. We sampled it and decided it needed another 2 weeks after the already one week. It was still slightly crunchy and didn't have the sauerkraut zing it should have had. good luck

My wife has two stone crock pots maybe 3-4 gallons each she uses to make sauerkraut and masato a rice and sugar drink. good and tasty
