Shortbread pie crust.

Pulse a few times in a food processor to get well mixed:
1 1/4 c All Purpose flour
1/3 c sugar
1 teaspoon lemon zest
1/4 teaspoon salt

Then add 1 stick cold butter cut into pieces. Pulse a few times to get it all to a coarse crumb type consistency.

Add 1 large egg yolk and pulse just a few more times to get it to come together.

Pat the dough down into your pie pan or roll it out like I do my normal pie crusts - just don't add any more flour. Do not attempt to crimp the edges.. its too fragile. Poke some holes in the bottom of the crust with a fork and bake 18 - 22 minutes at 400 degrees.

Crumb crust.

1 1/2 c crumbs from graham crackers, vanilla wafers, oreos, gingersnaps, take your pick.
6 tablespoons melted butter
1/4 cup sugar

Pulse a few times to get it to come together in the food processor and dump into your pan. Press into place and bake 10 - 15 minutes at 350 degrees.

Nut crust.

Pulse in your food processor just til its come together
2 cups pecan or walnut flour (Basically this is just very well chopped nuts. Put them in the food processor and let them go til they're powder. If you do this with roasted nuts, just make sure they're unsalted.)
Add 4 tablespoons melted butter
3 tablespoons sugar
1/4 teaspoon salt.

Dump in your pie pan, press into place, and bake at 375 for 10 - 15 minutes.
