Smoking Pork Belly

Smoking Pork Belly - 09/21/18 03:12 AM

I'm going to smoke 3 or 4 of these soon. My question is.....some folks leave the rind on, some cut it off. Which is best? When the Cure ingredients are put on the slab with the rind on, does the rub/cure penetrate the rind during the week in the fridge? Comments?

I'm going to try it. I have a belly curing now for pancetta. It takes a month to cure and dry it. I think I may smoke it a little after it's dried.
