Big Easy by Char boil oilless fryer

I tried some catfish this weekend-really didn't turn out they way i wanted it to. I have rear LOTs of great reviews on it. But on fish. Just did'nt get it. Any tips or suggestions. Thanks. I guess ill try some chicken this weekend. Or ribs
