I have used this recipe my adult life and it extends back in my German family before me.
25 lbs. meat
8 ounces salt
2 ounces coarse ground black pepper
1 ounce red pepper flake
(replace 1 oz of the salt with 1 oz of Prague Powder #2 if used for dried sausage)
* All recipe items by weight
