Haven’t tried it yet but have a couple questions.
How’s long will the unit log the data. Guess it is dependent upon the bytes chosen. So if you pick maybe the middle ground what would be a good average.
Also once the log if full does it star overwriting the old data?
Will the micro 32 card hold more info than the unit.

You will want to do your Sonar Logs on an SD card. The 32 card you refer to should provide approx. 4-hours.

No the recording will stop when the card is full. I think you'll find that a 32GB card will allow for a lot longer than 4 hours recording time.

I sort of thought so but have not tried it yet.
Once card is full how do you erase the info when ready.
I guess you could do it on a computer.

You can delete the file from the file menu on the unit or on the computer as you mentioned. I normally record all channels at 3200 bytes in the .SL2 format and get well over 4 hours on a 2GB card. I then review the files on the computer using the now defunct Lowrance sonar viewer. The viewer is a bit quirky, but you can still review all of the 2D, Down and SideScan sonar recordings with it. If you want a polished program for reviewing the logs, check out the ReefMaster program. You can download a trial version to test it out prior to buying.
