Fish pass on the bay side might be a place to check out if you are into wading. Corpusfishing.com has a wade and kayak map on the site. A kayak would open some water for you. If you have access to a kayak, you can launch out of Wilson's Cut and fish the Shamrock area. It's a pretty good paddle though. Wilson's occasionally suffers from break ins, but I never had problems there when I went. If the tides are up, then getting to these areas may be problematic. If you cross the channel, you can try on either side of 361 toward Aransas Pass, but I've not had much luck there. I do see a lot of people there though at times. Again, with a kayak, you could drift Steadman's with bait under a cork and likely produce a meal.

fish the end of the jetty next to the Lexington.
packery jetty can be good.
flounders should be moving good after this front
find drains & channel edges on an outgoing tide

You can also wade in the flats... off of 361 behind the Mustang Towers
