Found some Cajun season at Wal Mart the other day. My wife can't take the heat from some Cajun seasonings and I like the Cajun seasonings. It's called "Rajin'Cajun Fixin's". It's the mild season and it taste pretty good on baked catfish or fried catfish. Not a real spicy season, but got the Cajun style seasoning. Might have to go set the crawdad traps and see how it does in crawfish cornbread. Makes a good fried catfish crust also.

Cornmeal. Hot Lard. Salt-n-Pepper. To taste. Lemon if you like it. That's all you need.

We first soak the fillet in milk then dip in cornmeal. The cornmeal is seasoned up with Rajin Cajun. After coming out of the fryer, you can add some more for taste.
The way Bittercreek fries them is good also!

Anything but salt, pepper, and cornmeal is an insult to the cook and the fish.

5 LB yellow corn meal 8 oz salt and a package of spicy fish fry. You are ready for a few fish fries.

mix 1/2 franks hot sauce with 1/2 milk and soak the filets before frying. Subtle but noticeable.

Zatarain's if I have it. Otherwise a brown paper bag, cornmeal, salt, pepper. Peanut oil if I got it. Lard is plan B.
